Roger Rose brings a fine-dining sensibility and an owner’s understanding of daily operations to Apostrophi. His career spans restaurant kitchens, specialty coffee, private events and two decades of public service, with a consistent focus on how people are cared for.

Several formative years learning at Boca in Cincinnati shaped his attention to food, timing and the details that make service feel effortless. He went on to own and operate three third-wave specialty coffee shops, earning Specialty Coffee Association certification and developing experience in barista training. Consulting engagements with nationally recognized coffee companies broadened his work beyond his own businesses.

For a decade, Roger also owned a catering company serving high-end private dinners, weddings and celebrations. Those occasions demanded personal attention alongside careful planning: understanding the host, coordinating the team and delivering when there was only one opportunity to get it right.

Alongside his hospitality career, Roger spent 20 years serving as a firefighter and paramedic. He sees that work as another expression of hospitality: earning trust, anticipating needs and remaining composed when people depend on you. It informs a leadership style grounded in preparation, clear communication and responsibility for the people in his care.

His three bachelor’s degrees span pre-medical studies, organizational leadership and nursing, including a Bachelor of Science in Nursing. That education complements a career spent leading teams and making decisions where the details carry consequences.

Today, Roger brings those experiences together at Apostrophi, staying close to concept development, restaurant operations and partner relationships. For property owners, that means direct access to a founder who understands both the experience they want to create and the discipline required to deliver it every day.
